Moroccan Chickpea & Carrot Salad recipe description

Add 3/4 cup couscous into a bowl along with 1 cup hot water, stir and cover. In another bowl add 1/2 jar drained & rinsed Chickpeas, 1/2 cup Raisins, 2 medium grated carrots, 1/4 finely chopped red onion, 1 clove minced garlic & handful chopped mint, season to taste then mix well. For the dressing mix the juice of 1 orange, 1/2 lemon as well as zest of half lemon, 1/4 cup olive oil, 1 tbsp rice syrup, 1/2 tsp harissa paste, 1 tsp ground cumin, 1 tsp ground coriander, 1/2 tsp ground cinnamon, 1/2 thumb sized piece fresh grated ginger, salt to taste. Place a handful of lettuce on a plate, uncover and fluff up the couscous with a fork and add to the lettuce, then top with the salad mix, finally drizzle generously with the dressing.
